~ The best meatball recipe ever ~

Now that we have that out of the way, let's talk meatballs.  I'm a bit of a freak when it comes to food. I don't do greasy, fatty or meat most of the time.  These meatballs aren't a bit greasy, are super moist, taste like heaven and are pretty quick to make. The time flies even faster if you can enjoy a glass of wine while cooking.


Mama Dawanna's Meatball Recipe

2 lbs fresh lean ground beef
1 cup crumbled bread or 3/4 cup breadcrumbs
3 eggs
3 tbsp italian seasoning
1 tbsp garlic salt or sea salt
2 tsp black pepper
1/3 cup parmesan cheese
1/3 cup french fried onions

Blend all ingredients in a bowl with your hands. (There's just no way around this part.) Heat 1 inch of oil in a skillet to medium heat.  Form golf ball sized meatballs and add to the oil. Turn after about 1 minute,  browning the outside evenly.  Once browned, add the meatballs to a saucepan of hot water or broth.  I add a dash of sea salt and more italian seasoning to my broth/water bath.  Cover the broth with a lid while browning the rest of the meatballs.  Let them simmer for 15-20 minutes after cooking, just add the freshly browned meatballs to the pan and stir, leaving all meatballs in the broth pan.

 Serve up over your favorite pasta.  Mine is capellini.  Cooks in 3 minutes and is super thin. Love it! ♥
